Tosca Cake
Ingredients
- For Cake:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 7 tablespoons butter, melted
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
- 2/3 cup sugar
- 2 large eggs, room temperature
- For Topping:
- 7 tablespoons butter, melted
- 1/2 cup sugar
- 2 tablespoons flour
- 2 tablespoons milk
- 1 cup sliced almonds
This Swedish cake is made extra rich with Odense Almond Paste. The cake is crowned with a stunning caramelized almond topping.

Directions
- For cake: Preheat oven to 350°F. Grease and flour a 9" springform pan or spray with cooking spray.
- Sift together flour, baking powder and salt. Set aside.
- Combine melted butter, milk and extract. Cool to lukewarm.
- With electric mixer beat Almond Paste (grated using large hole side of a box grater) and sugar until combined. Add eggs one at a time, beating well between each and mixture is smooth.
- Add sifted flour alternately with milk mixture to almond paste mixture, ending with dry ingredients. Beat until just combined, do not over mix.
- Pour batter into prepared pan and bake 20-25 minutes or until top is set.
- For Topping: While cake is baking, combine butter, sugar, flour and milk in saucepan. Stirring, bring to a simmer over a medium-high heat and cook until thickened. Remove from heat and stir in almonds.
- When cake is done, carefully remove from oven and gently spread topping on cake.
- Raise oven temperature to 400°F. Place cake in oven and bake an additional 15 minutes or until topping is golden and bubbly. Set on wire rack, unmold and cool.
