Q. What is the difference between Almond Paste and Marzipan?
A. Almond Paste has a higher almond content, and is typically used for baking. Marzipan has a higher sugar content and is typically used for candy making.

Q. Are Almond Paste and Marzipan interchangeable?
A. Because baking is a science, we do not recommend using one in place of the other.

Q. Is Almond Paste and Marzipan Gluten-Free?
A. Yes! Almond Paste and Marzipan are both gluten-free. Pursuant to FDA guidelines, any product containing less than 20 PPM (parts per million) of gluten are in fact gluten-free. Almond Paste and Marzipan each contain less than 5 PPM of gluten, which is the lowest testable limit and far more stringent than FDA standards.

Q. If Almond Paste and Marzipan are Gluten-Free, then why is wheat listed in the ingredients?
A. We know, this one is confusing. We are required by law to list each and every ingredient on our packages, and in the case of glucose syrup, how it was derived. The glucose syrup used to make our Almond Paste and Marzipan was derived from wheat, however, all wheat proteins are removed during the refinement process.

Q. What can I do if my Almond Paste or Marzipan is hard?
A. The first step is to check the expiration date on your box, which can be found on an end flap. If your product is expired, we highly recommend throwing it out. If your product is within date and hard, please call us at 800.243.0897.

Q. What is the best way to store my opened Almond Paste or Marzipan?
A. Wrap any remaining Almond Paste or Marzipan tightly in plastic wrap, then place in a sealable plastic bag. You can then refrigerate it for up to 2 weeks, or freeze it up to 3 months.

Q. Are peanuts present in the facility that makes Almond Paste and Marzipan?
A. No, there are no peanut products made in the facility that produces Almond Paste or Marzipan.

Q. Are any other tree nuts present in the facility that makes Almond Paste and Marzipan?
A. Yes, hazelnuts are present in the same facility.

Q. Are the almonds treated with chemicals?
A. No, absolutely not. The almonds used in Almond Paste and Marzipan are simply blanched in water.

Q. What type of sugar is used to make Almond Paste and Marzipan?
A. We use beet sugar in both Almond Paste and Marzipan.

Q. How much is in a roll of Almond Paste or Mazipan?
A. One roll of Almond Paste or Marzipan is equivalent to ¾ cup, or 12 tablespoons.

Q. Do you have coupons you can send me?
A. No, unfortunately not. We do not print any manufacturer coupons at this time.

Q. What is the ingredient Invertase?
A. Invertase is a natural enzyme, very common in the natural world. Plants like Japanese pear fruit, the common garden pea, and cereal oats are good sources of invertase. Honey bees use invertase to keep their honey liquid. We add invertase to help keep our almond paste and marzipan from hardening.
