French Silk Pie with Almond Paste

Ingredients

  1. 1-7 oz box Odense Almond Paste
  2. 1 prebaked pie crust, or chocolate cookie crust
  3. 2 oz unsweetened chocolate, chopped
  4. 1 cup sugar
  5. 3 large eggs, room temperature
  6. 1 teaspoon vanilla extract
  7. 1 stick (1/2 cup) unsalted butter, softened
  8. 3/4 cup heavy cream
  9. Optional: sweetened whipped cream and chocolate shavings
This classic chocolate pie has a surprise layer of Almond Paste for the almond lovers in the family.

40 minutes to prepare
4-6 hours to chill

Directions

  1. Flatten Almond Paste into a disk. Place between wax paper and roll out to 8 inch circle. Gently but firmly, lay almond paste into bottom of pie crust.
  2. Add chopped chocolate to top of double boiler. Melt over barely simmering water. Cool to lukewarm.
  3. Add sugar and eggs to saucepan. Whisk until combined. Stirring constantly, cook over low heat until mixture reaches 160°F on a candy thermometer. Add melted chocolate and vanilla. Whisk well and cool to 90°F.
  4. Meanwhile, beat butter on high speed until light and fluffy. Add cooled chocolate mixture and beat on high for 5 minutes.
  5. Beat heavy cream until it holds stiff peaks. Add to chocolate mixture and fold together until totally incorporated.
  6. Pour filling into pie shell and chill until firm, 4-6 hours. Before serving, garnish with whipped cream and chocolate shavings, if desired.
