Chocolate Almond Cut Out Cookies

Ingredients

  1. 1 cup all-purpose flour
  2. 1/3 cup dark cocoa powder
  3. 1/4 teaspoon baking soda
  4. 1/4 teaspoon salt
  5. 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
  6. 2/3 cup sugar
  7. 1/2 cup bittersweet chocolate chips
  8. 1 stick unsalted butter (1/2 cup) softened
  9. 1 large egg yolk
  10. 1/2 teaspoon vanilla extract
  11. Optional: 1 tablespoon almond liqueur
  12. 12 oz white chocolate (or any color) melting wafers
Odense Almond Paste is a natural with chocolate. This is a great cookie for any occasion; just use the right cookie cutter, according to the holiday!

40-2 3/4 X 2 inch cookies

Directions

  1. Sift together flour, cocoa, baking soda and salt. Set aside.
  2. Add Almond Paste (grated using large hole side of a box grater), sugar and chocolate chips to a food processor fitted with a metal blade. Pulse until the texture of sand. Add mixture to mixing bowl.
  3. Add butter to almond paste mixture and beat until well combined (about 3 minutes). Add egg yolk, vanilla and almond liqueur (if desired) and beat until light and fluffy. Add sifted ingredients and mix until combined.
  4. Divide dough in half and flatten into disks. Cover each disk with plastic and chill in refrigerator until dough is just firm, about 30 minutes.
  5. About 10 minutes before rolling out cookies, preheat oven to 350°F and line baking sheets with parchment.
  6. On a lightly floured surface, roll out dough to about a 3/16 inch thickness. Cut into desired shapes and space 2 inches apart on baking sheet. Bake for 8-10 minutes. Repeat with remaining dough until all used.
  7. Place baking sheets on wire rack and cool cookies until firm enough to transfer to a wire rack. A thin off-set spatula is best for this step.
  8. Melt chocolate in a double boiler and dip or decorate cookies according to your heart's desire. Pun intended.
