Chocolate Almond Cut Out Cookies
Ingredients
- 1 cup all-purpose flour
- 1/3 cup dark cocoa powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
- 2/3 cup sugar
- 1/2 cup bittersweet chocolate chips
- 1 stick unsalted butter (1/2 cup) softened
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- Optional: 1 tablespoon almond liqueur
- 12 oz white chocolate (or any color) melting wafers
Odense Almond Paste is a natural with chocolate. This is a great cookie for any occasion; just use the right cookie cutter, according to the holiday!

40-2 3/4 X 2 inch cookies
Directions
- Sift together flour, cocoa, baking soda and salt. Set aside.
- Add Almond Paste (grated using large hole side of a box grater), sugar and chocolate chips to a food processor fitted with a metal blade. Pulse until the texture of sand. Add mixture to mixing bowl.
- Add butter to almond paste mixture and beat until well combined (about 3 minutes). Add egg yolk, vanilla and almond liqueur (if desired) and beat until light and fluffy. Add sifted ingredients and mix until combined.
- Divide dough in half and flatten into disks. Cover each disk with plastic and chill in refrigerator until dough is just firm, about 30 minutes.
- About 10 minutes before rolling out cookies, preheat oven to 350°F and line baking sheets with parchment.
- On a lightly floured surface, roll out dough to about a 3/16 inch thickness. Cut into desired shapes and space 2 inches apart on baking sheet. Bake for 8-10 minutes. Repeat with remaining dough until all used.
- Place baking sheets on wire rack and cool cookies until firm enough to transfer to a wire rack. A thin off-set spatula is best for this step.
- Melt chocolate in a double boiler and dip or decorate cookies according to your heart's desire. Pun intended.
