Almond Pumpkin Bars

Ingredients

  1. 1-7oz box Odense Almond Paste (grated using large hole side of a box grater)
  2. ⅔ cup brown sugar
  3. 1-15 oz can pumpkin puree
  4. 4 eggs
  5. 1 cup neutral oil
  6. 2 cups all purpose flour
  7. 2 tsp cinnamon
  8. 2 tsp baking powder
  9. 1 tsp baking soda
  10. Pinch salt

Directions

  1. Preheat the oven to 350°F. Grease a 9x13 inch pan.
  2. Place grated Almond Paste and brown sugar into a food processor. Pulse until it becomes a sandy texture.
  3. Whisk the almond paste sugar mixture with the pumpkin puree, eggs, and oil until combined.
  4. In another bowl, whisk the flour, cinnamon, baking powder, baking soda, and salt.
  5. Sift the dry ingredients into the bowl of wet ingredients.
  6. Fold with a spatula until just combined.
  7. Pour into the prepared pan and bake for 30-35 minutes, until the center of the cake springs back or a toothpick comes out clean. Cool completely in the pan on a wire rack.
