Almond Orange Marmalade Muffins
Ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
- 1/2 cup orange juice
- 1/2 cup orange marmalade
- 1/2 stick (4 tablespoons) unsalted butter melted
- 1 large egg
- Optional: sugar for sprinkling muffins tops
The flavors of Almond Paste and orange make for a delectable moist muffin; perfect for breakfast or an afternoon tea.

10 minutes to assemble.
18 to 20 minutes to bake.

Directions
- Preheat oven to 375°F. Grease muffin pan or line with paper or foil liners.
- Sift flour, sugar, baking powder, baking soda and salt into a medium bowl. Mix in Almond Paste (grated using large hole side of a box grater), separating with fingers until all pieces are coated with flour.
- In a medium bowl beat orange juice, orange marmalade, melted butter, and egg until well mixed.
- Make a well in center of dry ingredients and pour in liquid ingredients. Beat with a spoon until just combined. Over beating makes a tough muffin.
- Spoon or scoop* batter into prepared pan and sprinkle top with sugar if desired. Bake for 18-20 minutes or until lightly golden on top. Cool pan on wire rack for 5 minutes then transfer muffins to rack to cool.
