Almond Buttermilk Pancakes

Ingredients
- 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
- 2 cups buttermilk
- 2 eggs
- 4 tablespoons melted butter
- 1 1/2 cups flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup quick cooking oats
- Oil for griddle
Once you make homemade pancakes, you’ll never want to use a box mix again and the blender does all the work! The addition of Almond Paste and oats makes these pancakes high in fiber and flavor . . . think brunch.

Directions
- Add Almond Paste (grated using large hole side of a box grater), buttermilk, eggs and butter to blender. Blend until smooth.
- Sift flour, baking powder, baking soda and salt into blender. Add oats and blend until mixed.
- Heat large skillet or griddle over medium heat and lightly oil.
- Pour about 1/4 cup amounts of batter from blender onto hot skillet. Flip pancakes over when edges are dry. Cook until brown on both sides. Serve with favorite toppings.
