Almond Apricot Logs

Ingredients

  1. 1- 7 oz box Odense Almond Paste or Marzipan*
  2. 2 tablespoons chopped dried apricots
  3. 2 tablespoons chopped almonds, plus 6 whole almonds for decoration
  4. 2 cups melted coating chocolate
  5. 1 cup melted white coating chocolate
  6. *Marzipan will be sweeter than Almond Paste, but either can be used.
Chopped apricots with almond paste are a delicious combination.

2 Almond Apricot Logs

Directions

  1. Using your hands, knead together the almond paste, chopped apricot and chopped almonds.
  2. Divide the mixture in half and form into two logs, each about 5 inches long with their ends slightly tapered.
  3. Pick up one of the logs and coat one side with the melted coating chocolate, using a spatula. Place the log chocolate-side down on a piece of parchment paper. Finish coating the log's sides and top with chocolate. Repeat with the second log.
  4. Drizzle the logs with the white coating chocolate. For decoration, place a few whole almonds along the tops of the logs for decoration.
  5. To serve, slice using a sharp knife.
  6. Store refrigerated in an airtight container for up to two weeks.
