Almond Apricot Logs
Ingredients
- 1- 7 oz box Odense Almond Paste or Marzipan*
- 2 tablespoons chopped dried apricots
- 2 tablespoons chopped almonds, plus 6 whole almonds for decoration
- 2 cups melted coating chocolate
- 1 cup melted white coating chocolate
- *Marzipan will be sweeter than Almond Paste, but either can be used.
Chopped apricots with almond paste are a delicious combination.

2 Almond Apricot Logs
Directions
- Using your hands, knead together the almond paste, chopped apricot and chopped almonds.
- Divide the mixture in half and form into two logs, each about 5 inches long with their ends slightly tapered.
- Pick up one of the logs and coat one side with the melted coating chocolate, using a spatula. Place the log chocolate-side down on a piece of parchment paper. Finish coating the log's sides and top with chocolate. Repeat with the second log.
- Drizzle the logs with the white coating chocolate. For decoration, place a few whole almonds along the tops of the logs for decoration.
- To serve, slice using a sharp knife.
- Store refrigerated in an airtight container for up to two weeks.
