Almond Apple Granola
Ingredients
- 1-7 oz box Odense Almond Paste, diced into small pieces
- 1/2 cup nut oil, such as almond or hazelnut
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 4 cups rolled (old fashioned) oats
- 2 cups Cheerios with Ancient Grains
- 2 cups sliced almonds
- 1 cup honey wheat germ
- 1 1/4 cups dried apples
- 1 cup dried, sweetened cranberries
Grated Odense Almond Paste adds a delicious taste and texture to this apple and maple flavored granola. Use as a breakfast cereal, snack, or even as a topping on yogurt or ice cream.

Directions
- Position 2 racks in middle two thirds of oven. Preheat oven to 300 degrees. Line large baking sheets with parchment.
- Add diced Almond Paste, nut oil, maple syrup and brown sugar to a medium sauce pan. Cook on a medium-low heat and bring to a simmer stirring occasionally. Cook until melted and smooth then whisk in cinnamon and salt. Mix until incorporated.
- Meanwhile add: oats, cheerios, sliced almonds and wheat germ to a large bowl. Toss until well mixed. Slowly pour melted almond paste mixture over oat mixture. Toss until all ingredients are coated. Divide mixture between 2 rimmed baking sheets and place in oven.
- Bake for 20 minutes and stir each tray. Reverse trays, top to bottom and bottom to top. Bake 20 additional minutes. Cool sheets on wire racks. While granola is cooling, dice dried apples. Pour granola into a large bowl and add apples and cranberries. Mix well. Store in airtight containers. We like large glass jars, with lids (mason jars or funky cookie jars work well).
