Cranberry-Pear Almond Galette
Ingredients
- 1-7 oz box Odense Almond Paste
- 1 box (17.25 oz) puff pastry sheets (2 sheets), thawed
- 2 tablespoons butter
- 4 ripe pears, peeled and cubed (about 4 cups)
- 2 cups raw cranberries
- 2/3 cup sugar plus some for sprinkling
- 1 teaspoon apple pie spice
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1 egg mixed with 2 tablespoons water (egg wash)
A galette is a free-form tart that can be sweet or savory. We have paired sweet pears and tart cranberries with Almond Paste for a fall celebration of flavors.

Directions
- Preheat oven to 400°F. Grease baking sheet or line with parchment. Thaw pastry according to directions.
- In a skillet over a medium high heat, melt butter and add pears. Stirring, cook for 2-3 minutes. Add cranberries and cook until they begin to pop. Add sugar, spice and salt. Stirring, cook until sugar melts.
- In a small bowl, whisk cornstarch with 1/4 cup water until smooth. Add to fruit. Cook until liquid is just thickened and clear. Remove fruit from pan to a wide dish. Freeze to cool quickly.
- On a lightly floured surface, roll one sheet of pastry to 12" by 14". Center a 9" plate on pastry and lightly trace around plate. Cut a 2" circle around the outside edge of traced circle. Center circle on baking sheet.
- Divide Almond Paste in half and flatten into disk. Set half roll aside. Roll disk into a thin 9" circle. Place disk on top of traced circle.
- Evenly spread one-half of cooled fruit on top of disk. Set aside remaining fruit. Fold outside pastry edges into center. Brush with egg wash and sprinkle with sugar. Bake for 30-35 minutes or until golden and flaky. Repeat with remaining ingredients.
- Note: For a festive presentation use the leftover puff pastry and cookie cutters, to cut out leaves (or acorns) for Thanksgiving, and stars for Christmas. Attach cutouts with egg wash and sprinkle with sugar.
