Oatmeal Almond Cake
Ingredients
- 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
- 3/4 cup sugar
- 1 cup (2 sticks) butter, room temperature
- 2 large eggs
- 1 cup applesauce, sweetened
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups quick cooking oats (not rolled)
- Favorite icing or frosting
Oatmeal and Odense Almond Paste make a dense and rich cake.

Directions
- Preheat oven to 350°F. Grease and flour baking pan.
- Add Almond Paste (grated using large hole side of a box grater), sugar and butter to a mixing bowl. Mix on low to combine. Beat on high for 2 minutes or until light colored.
- Add eggs one at a time, beating until light and fluffy. Pour in applesauce and mix until combined, scraping down sides of bowl occasionally.
- Sift flour with baking powder and salt. Beat flour and oats into almond mixture until incorporated. Spoon batter into prepared pan.
- Bake 30 minutes or until top is lightly browned and toothpick comes out clean. Cool on wire rack and cover with favorite frosting, icing, or a light sifting of powdered sugar.
