Oatmeal Almond Cake

Ingredients

  1. 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
  2. 3/4 cup sugar
  3. 1 cup (2 sticks) butter, room temperature
  4. 2 large eggs
  5. 1 cup applesauce, sweetened
  6. 1 1/2 cups all-purpose flour
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon salt
  9. 3 cups quick cooking oats (not rolled)
  10. Favorite icing or frosting
Oatmeal and Odense Almond Paste make a dense and rich cake.

20 minutes to assemble
30 minutes to bake
Total time: 50 minutes

Directions

  1. Preheat oven to 350°F. Grease and flour baking pan.
  2. Add Almond Paste (grated using large hole side of a box grater), sugar and butter to a mixing bowl. Mix on low to combine. Beat on high for 2 minutes or until light colored.
  3. Add eggs one at a time, beating until light and fluffy. Pour in applesauce and mix until combined, scraping down sides of bowl occasionally.
  4. Sift flour with baking powder and salt. Beat flour and oats into almond mixture until incorporated. Spoon batter into prepared pan.
  5. Bake 30 minutes or until top is lightly browned and toothpick comes out clean. Cool on wire rack and cover with favorite frosting, icing, or a light sifting of powdered sugar.
