Almond White Chocolate Truffles

Ingredients

  1. 1-11 oz package of white chocolate chips
  2. 1-7 oz box of Odense Marzipan, grated
  3. 1/3 cup heavy cream
  4. 1 tablespoon Baileys Irish Cream with Caramel
  5. Optional: Green food coloring, 1-6 oz package melted semi-sweet chocolate chips, confectioners sugar.
Baileys Irish Cream with Caramel is the secret ingredient that complements the Marzipan and white chocolate in this recipe.

Time

10 minutes to assemble
2 hours to chill
30 minutes to shape

Yield

70- 1 inch truffles

Directions

  1. Place white chocolate chips, Marzipan, and heavy cream in a bowl set over a pan of barely simmering water.
  2. Stir constantly with a rubber spatula until mixture is completely smooth. Remove from heat and whisk in Baileys Irish Cream with Caramel and food coloring (if desired) until favorite color of green is achieved. Cover bowl and refrigerate for 2 hours.
  3. With 2 teaspoons (or small cookie scoop with a wire release) drop dollops of truffle mixture onto a parchment lined cookie sheet. Shape into balls and refrigerate.
  4. Leave truffles plain, dip in dark chocolate or roll in confectioners sugar for a decorative effect.
