Tosca Cake

Ingredients

  1. For Cake:
  2. 1 cup all-purpose flour
  3. 1 teaspoon baking powder
  4. 1/4 teaspoon salt
  5. 7 tablespoons butter, melted
  6. 1/4 cup milk
  7. 1/2 teaspoon vanilla extract
  8. 1-7 oz box Odense Almond Paste (grated using large hole side of a box grater)
  9. 2/3 cup sugar
  10. 2 large eggs, room temperature
  11. For Topping:
  12. 7 tablespoons butter, melted
  13. 1/2 cup sugar
  14. 2 tablespoons flour
  15. 2 tablespoons milk
  16. 1 cup sliced almonds
This Swedish cake is made extra rich with Odense Almond Paste. The cake is crowned with a stunning caramelized almond topping.

Directions

  1. For cake: Preheat oven to 350°F. Grease and flour a 9" springform pan or spray with cooking spray.
  2. Sift together flour, baking powder and salt. Set aside.
  3. Combine melted butter, milk and extract. Cool to lukewarm.
  4. With electric mixer beat Almond Paste (grated using large hole side of a box grater) and sugar until combined. Add eggs one at a time, beating well between each and mixture is smooth.
  5. Add sifted flour alternately with milk mixture to almond paste mixture, ending with dry ingredients. Beat until just combined, do not over mix.
  6. Pour batter into prepared pan and bake 20-25 minutes or until top is set.
  7. For Topping: While cake is baking, combine butter, sugar, flour and milk in saucepan. Stirring, bring to a simmer over a medium-high heat and cook until thickened. Remove from heat and stir in almonds.
  8. When cake is done, carefully remove from oven and gently spread topping on cake.
  9. Raise oven temperature to 400°F. Place cake in oven and bake an additional 15 minutes or until topping is golden and bubbly. Set on wire rack, unmold and cool.
